maple brown sugar granola

easy peasy and addictive to say the least

Ingredients: (makes around 2 cups)
1 cup rolled oats
1.5 cups chopped nuts of choice*
2 tablespoons coconut oil
1 tablespoon brown sugar
1 tablespoon maple syrup
1/2 tsp salt
1/2 cup chopped dried fruit (I used cherries)

1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
2. Melt together the coconut oil, brown sugar, maple syrup, and salt. I used a microwave but you could also do it in a small pot over the stove.
3. Mix together the rolled oats and nuts with the oil-sugar mixture until everything is evenly coated and spread it out on the baking sheet.*
4. Bake for 15-20 minutes until fragrant and toasted. Stop and mix the granola halfway through baking.
5. Once toasted, remove from the oven and mix in the dried fruit. Spread it into a thick layer to help chunks form as it cools.
6. Let cool completely and enjoy!
*I used @costco’s unsalted mixed nuts but you could use any variety you like. You could also add dried coconut.
*I did the mixing on the baking sheet but you could use a bowl.
